TEA BISCUITS
1 c. sugar.....1/2 c. shortening
8 Tbsp.
milk powder.....3 1/2 c. flour
2 c. cake flour..
...3 1/2 Tbsp. baking powder
3 eggs, slightly
beaten....1 1/4 c. water
1/2 tsp. salt.....1/2
c. raisins
1 tsp. vanilla
Combine all dry
ingredients. Cut in shortening. Add eggs, water and
vanilla, mix. Knead lightly. Roll out to 1/2 inch
thick. Cut out with a 2 inch cutter. Place on a
cookie sheet; brush tops with an egg wash (1 egg
beaten with 1 Tabsp. water). Bake at 400 degrees
for 10 minutes. These have more of a cake texture
than that of a biscuit.
