MEXICAN PECAN CANDY
2 c.granulated sugar.....3/4 c.
milk
2 Tbsp. butter.....1/2 tsp. soda
1/2 c.
pecans
Combine ingredients and boil until it
forms a soft ball in water. Remove from heat and
beat. Add butter and pecans and drop from spoon
onto wax paper.
VANILLA FUDGE
1 1/2 c. granulated sugar.....3/4
c. cream or rich milk
Pinch of cream of tartar
.....1/4 tsp. vanilla
Dissolve sugar in
cream over heat, add cream of tartar. Boil,
stirring constantly until a ball is formed when
tested in cold water. Remove from heat and when
cool, add vanilla and 1/2 cup nuts if desired. Beat
until creamy and pour on well greased pan. Cut in
squares.
PENUCHE
3 c. granulated sugar.....1 c. Lt. brown sugar
2 c. pecans.....1 c. cream
1 Tabsp. butter
or margerine
Bring granulated sugar and
creamto boil, add brown sugar. Cook until it forms
soft ball. Remove from heat and add butter and
pecans. Beat until creamy. Drop by spoon onto
greased paper.
