TOMATO CATSUP

2 1/2 qts (15 to 17 medium sized sliced tomatoes)
3/4 c. chopped onion
3-inch piece stick cinnamon
1 tsp. whole cloves
1 Lrg. garlic clove, chopped
1/2 c. sugar
1 c. vinegar
1 1/4 tsp. salt
1 tsp. paprika
Dash cayenne pepper


1. Simmer together tomatoes and onion for 20 to 30 minutes or until soft. Press through sieve.

2. Boil tomato mixture rapidly until you have one-half the original amount. Stir to prevent sticking.

3. Put the cinnamon, cloves, and garlic loosely in a spice bag. Add to vinegar and simmer 30 minutes. Remove spice bag.

4. Add spiced vinegar, sugar, salt, paprika, and cayenne to tomato mixture.

5. Boil rapidly, stirring constantly, about 10 minutes or until slightly thickened.

6. Pour into hot, sterilized jars, and seal. Makes about 2 pints.
