BUTTERMILK CANDY
2 c. milk
1 c. buttermilk
2 Tbsp. light corn syrup
1 tsp. soda
1 stick butter or margerine
1 tsp. vanilla
pinch salt
1 c. chopped pecans
Combine sugar, buttermilk, soda, syrup and butter in large pan. Cook to soft ball stage; remove from heat. Add vanilla and slt; beat well. Add pecans and drop from tsp. NOTE:
Recipe may be doubled.
#2 METHOD
1 tsp. soda
1 c. buttermilk
2 c. sugar
1/4 lb. butter
1 tsp. vanilla
1 c. nuts
Stir soda into buttermilk; add to sugar and butter. Cook to hard ball stage. Remove from heat. Add vanilla. Add a small amount of nuts at a time, beating after each addition. Spread into a buttered pan to cool. Cut into squares to serve. Yield: 8 servings

2 c. sugar
1 c. buttermilk
1 tsp. soda
1/4 tsp. salt
1 c. chopped pecans
Combine sugar, buttermilk, soda and salt. Bring to a boil, stirring constantly. Cook about 7 minutes or to the soft ball stage. Add nuts and beat until candy thickens. Pour onto waxed paper. Yield: 2 lbs.
