CARAMELS
1 lb. sweet chocolate
1 lb. dark brown sugar
3/4 lb. soft butter
1 c. dark corn syrup
2 c. milk
2 Tbsp. vanilla
Combine all ingredients. Cook, stirring constantly for 45 minutes or until a hard ball form in cold water. Pour into buttered pan. Cool and cut.
CARAMELS #2
2 c. sugar
1 3/4 c. light corn syrup
1/2 lb. butter
pinch salt
1 lge. can evaporated milk
walnuts (opt.)
Combine all ingedients except milk and walnuts. Boil until a firm ball will form in cold water, stirring constantly. Add milk and continue cooking until very thick. Add walnuts. Pour into an 8x8-inch glass baking dish. When cool cut into squares; wrap in wax paper.
