PEANUT BRITTLE

2 c. sugar
1 c. light corn syrup
1/2 c. water
2 c. raw peanuts
1 Tbsp. butter (heaping)
1 tsp. vanilla
2 tsp. soda


Combine sugar, corn syrup and water; cook until small amount of mixture tested in cold water crackles against cup. Add peanuts and butter; cook until peanuts begin to brown. Remove from heat; add vanilla soda. Pour onto large buttered sheet. When cool enough to handle, pull and stretch at edges. Break off pieces; continue to pull until all is thin and brittle.


PEANUT BRITTLE #2

This is my favorite one.
2 c. sugar
1/2 c. water
1 c. light corn syrup
2 c. raw peanuts
dash salt
1 tsp. soda (heaping)
1 tsp. vanilla


Combine sugar, water and corn syrup in large heavy saucepan; boil until small amount forms a hard ball when dropped in cold water. Remove from heat; add soda and vanilla. Pour into well buttered surface; smooth out thin. Crack when cooled.
