APRICOT BALLS

3/4 c. dried apricots
3/4 c. shredded coconut
1/2 c. walnuts or almonds
1 tsp. grated lemon rind
1 tsp. lemon juice
1 tsp. orange rind
1 Tbsp. orange juice
2 Tbsp. powdered sugar


Cover apricots with boiling water; let stand 10 minutes. Drain well. Combine apricots, coconut and nuts; put through food grinder twice. Combine all ingredients. Form in balls and roll in granulated sugar.

APRICOT BALLS #2

1 1/2 c. dried apricots
1 c. shreded coconut
1/4 lb. marshmllows
1/4 can sweetened condensed milk
sugar


Grind apricots, coconut and marshmellows together. Add milk; mix. Shape into small balls; roll in sugar. Roll in sugar again 30 minutes later.

APRICOT CANDY

1 10-oz. pkg. dried apricots
1 orange
1 c. granulated sugar


Grind apricots and orange in food chopper. Add sugar to apricots and orange. Cook in double boiler until mixture is sticky. Drop by Tbsp. in granulated sugar. Cool until firm. Yield: 30 servings.

APRICOT CONFECTION

2 lb. dried apricots
3 cans coconut
1 can sweetened condensed milk


Grind apricots; add coconut and milk. Chill in refrigerator overnight. Form into balls the size of walnuts; roll in powdered sugar. Store in refrigerator in covered container. Will keep indefinately. Yield: 100 servings.

GOLDEN STICKS

1 12-oz. pkg. dried apricots
1 c. golden raisins
1 can flaked coconut
1 can sweetened condensed milk
1 can finely chopped coconut


Put apricots and raisins through medium blade of food chopper twice. Add flaked coconut and condensed milk; mix well. Wet hands and shape mixture into sticks about 1 1/2 x 1/2-inch. Roll in chopped coconut. Let stand about 20 minutes before putting in a container. NOTE: These freeze well. Yield: 60 pieces.
